Spelt with feta cheese, cherry tomatoes, black olives and mint

Ingredients for 3 persons
  • 250 gr pearled spelt
  • 500 ml water
  • 300 gr cherry tomatoes
  • 150 gr feta cheese
  • 4 tbsp black olives preserved in oil
  • a spring of mint
  • to taste salt and pepper
  • as required extra virgin olive oil

Preparation

  • Rinse the spelt under running water and put it in the Snips rice cooker with a pinch of salt and 500 ml of water.
  • Close with the lid and cook in the microwave oven for approximately 20 minutes at 700W.
  • Wash the tomatoes and cut them in quarters.
  • Add a pinch of salt, pepper, extra virgin olive oil, the olives and a few chopped mint leaves.
  • Add the tomatoes and the diced feta cheese to the lukewarm spelt and serve.
